Life on Mars
by Thea Liberty Nichols

The David Bowie art up on the wall, printed by Delicious design and framed by April 7s, is just one half of how this modest, vegan takeout spot got its name. The other half is the out-of-this-world confusion that owner Adam Paul was faced with when explaining his diet to others.

Affectionately referring to his restaurant, which opened its doors this February, as simply Mars, the twelve-year vegan veteran is proud to identify as a Martian now that he is in the good company of fellow cooks and customers who frequent the restaurant. Paul’s inspiration for the restaurant came after selling his previous business, the popular Ukranian Village coffee house Atomix, taking some time off, and ruminating on his sister’s travel stories of takeout places abroad where customers would come in off the street, point to the picture of the item they wanted, pick a size and leave with a customized meal.

While Paul tries to rotate new items onto the menu, such as pizza and tacos, every couple of days, they also feature staple favorites like Mac and Cheese, Super Yams and Coconut Greens daily. It’s the perfect spot for a hot summer’s night soy milkshake. Expect more indoor seating and re-useable containers (a la bento boxes) for frequent customers, both coming soon.
